"Eggcellent" Eggplant Stir Fry

Hello Health Enthusiasts,

I had a taste for eggplant a couple of nights ago, so I decided to make it.  Eggplants are an "eggcellent" source of fiber (great meat alternative that will alkalize the body), manganese, molybdenum, and potassium (more than bananas!).  While I'm all about raw food, I have yet to figure out a way to enjoy raw eggplant.  If you have any suggestions about how to eat raw eggplant, plase post them in the comments section.  Have fun!



Ingredients

2 - 3 Small Eggplants (Finely Chopped)
1 Small Red Onion Finely Chopped
2 - 3 Garlic Cloves, Minced
3 Celery Stalks, Finely Chopped
2 Cups of Fresh Spinach or Fresh Shredded Romaine Lettuce or Finely Shredded Kale Greens
3 - 4 Tablespoons of Coconut Oil
1 -2 Pinches of All Natural, Salt-Free Curry Seasoning
1 Tablespoon of Fresh Thyme
Himalayan Primordial Pink Salt (to taste)
Fresh Ground Tri-Colored Pepper (to taste)

Sautee eggplant, onion, garlic, and celery in coconut oil over medium to low heat until soft.  Avoid overcooking (when veggies start to change colors and brown).  Add thyme, curry, salt and pepper.  Taste and adjust salt, herbs and spices.  Serve over lettuce or spinach and enjoy!

Hump Day Breakfast of Healthy Champions

Chia Seed Cereal/Pudding


Good morning health enthusiasts!  I just finished my 30 minutes of inspirational/motivational reading and I feel like more than a conqueror.  God is great!

Today I'm having chia seed cereal for breakfast, loaded with fiber for healthy digestion and blood sugar, Omega-3 and Omega-6 fatty acids for health hear, circulatory system and brain.  Yes, this is the same chia seed that you have probably seed in Chia Pet commercials.  "Ch-Ch-Ch-Chia!"  Enjoy!

3/4 Cup Organic Chia Seeds
2 Cups Unsweetened Organic Nut/Seed Milk (almond or hemp)
Cinnamon and Nutmeg to Taste or Cinnamon and Pumpkin Spice to Taste
1/4 - 1/2 Teaspoons  (to taste) of Stevia or Just Like Sugar or Organic Palm Sugar (Coconut Sugar) (do not use coconut sugar if you are diabetic)
1/4 Cup Berries (blueberries, blackberries, raspberries, sliced strawberries, great source of Vitamin C)

Mix chia seeds and nut/seed milk and let sand for 10 minutes.  Add cinnamon, nutmeg and suggested zero calorie sweetener to taste.  Garnish with berries and serve!  Yes, you can reverse chronic illness with healthy eating and healthy thinking.  Yes, you can!

Delicious Quinoa "Tabbouleh" Salad

This afternoon I had green smoothies with an old dear friend.  He sucked down that smoothie like it was the best thing sliced sliced gluten free brad, LOL!  He's having a little trouble with acid-induced inflammation in his digestive tract (blood in stool).  He inspired me to post this, guaranteed to alleviate inflammation when combined with an animal protein-free, wheat-free, sugar-free, dairy-free lifestyle. 1 teaspoon of baking soda in 16 ounces of water for 1 week, first thing in the morning will help get rid of digestive tract inflammation too.  Enjoy!


Ingredients
1 Cup Quinoa
3/4 Teaspoon Himalayan Primordial Pink Salt
1/4 Teaspoon pepper
2 1/2 Cups Alkaline Water
1 Cup Finely Chopped Parsley
1/4 Cup Finely Chopped Fresh Mint
1/2 Cup Finely Chopped Green Onions, Including Tops
2 Medium Tomatoes, Finely Chopped
1 Stalk Celery, Finely Chopped
1 Medium Cucumber, Finely Chopped
1/4 Cup Cold Pressed Organic Olive Oil
1/3 Cup to 3/8 Cup Fresh Squeezed Lemon Juice, to Taste

Instructions

The night before, in a rice cooker, cook 1 cup quinoa in 2 and 1/2 cups alkaline water.  The next day place quinoa in a large mixing bowl, stir in parsley, mint, green onions, tomatoes, celery and cucumbers.  Sir in olive oil, 1/3 cup lemon juice, 3/4 teaspoon salt and 1/4 teaspoon pepper.  If desired, add remaining lemon juice to taste.  Refrigerate for 2 hours.  Stir before serving and enjoy!  Yes, you can be healthy and wealthy!  Yes, you can!



Breakfast of Champions 2: Quinoa wih Lentils Quick and In a Hurry

Hello All,

I'm running three businesses now, so I'm all about quick and easy meal ideas.  Here's one that works for breakfast, lunch, dinner AND snacks!

1 Cup Quinoa (high in protein, folate, vitamin E, Manganese and phosphorus, anti-inflammatory)
1 Cup Organic Lentils (rich in fiber to stabilize blood sugar, magnesium to lower blood pressure and prevent heart disease, iron, protein, vitamin B1, and folate)
5 Cups Alkaline Water (to raise your pH and flush toxic acids out of your body)
3 Tablespoons of Coconut Oil (for healthy cholesterol, healthy weight, nature's antibiotic/antiviral)
Himalayan Primordial Pink Salt to Taste

Throw all of this in a rice cooker and push the start button at bedtime.  It will be warm, ready, delicious and nutritious the next morning.

Breakfast (Cereal) Option: add unsweetened almond milk, cinnamon, nutmeg, pumpkin spice and 2 - 4 teaspoons of Just Like Sugar or stevia or coconut sugar (do not use coconut sugar if your are diabetic)

Lunch Option: add sliced avocado and tomato salad on over the lentils and quinoa

Dinner Option: serve with broccoli, lightly sauteed in coconut oil, Himalayan primordial pink salt and your salt-free seasoning of choice

My Breakfast of Champions, August 2, 2012

I had an avocado and tomato salad as a pre-breakfast this morning.  About 2 hours after that I had my Green Mojitolikeness Shake.  Here are the recipes.

Yummy Avocado Tomato Salad

Slice 1 Whole Avocado, Pitted and Peeled
Slice 1 Whole Tomato
Add Himalayan Primordial Pink Salt and Fresh Grounds Pepper to Taste
Squeeze Juice of 1/2 Lime over sliced and tossed avocado and tomato
Optional: Add 1 Tablespoon of fresh, chopped cilantro
Toss sliced avocado and tomato together gently in a salad bowl.  Enjoy!


Green Mojitolikeness Shake


2 Handfuls (cups) of Fresh Raw Organic Spinach
2 Small Limes (peeled)
1 Whole Avocado Peeled and Pitted
1/1 English Cucumber (the one wrapped in plastic)
1 Scoop of wheatgrass powder (or any other grass, no spirulina)
1/4 cup of DeSouza's liquid chlorophyll
4 Fresh Mint Leaves with stem if you can
12 - 16 Ice Cubes (more or less depends on texture desired)
1 - 3 Tablespoons of Just Like Sugar (chicory root powder) or stevia (Truvia)
1 Pinch of Himalayan Pink Salt


Yes, you can be healthy and EAT to reverse chronic illness.  I probably eat 4 - 5 avocados every day!  Yes, you can!

Chick-fil-A sandwiches contain MSG, HFCS and anti-foaming chemicals; eating them is a sin in the eyes of God

Mike Adams, the Health Ranger, does an excellent job of explaining the Chick-fil-A distraction.  Did you know that Chick-fil-A sandwiches contain the following mostly toxic ingredients?:

  • monosodium glutamate (MSG, know to contribute to brain damage)
  • soybean oil (very likely genetically modified)
  • sodium aluminum phosphate
  • dimethylpolysiloxane (anti-foaming chemical, used in breast implant fillers)
  • high fructose corn syrup (very likely genetically modified, consumption can lead to obesity and liver damage)
  • ammonia sulfate
  • soy lecihin
  • polysorbate 80
  • Yellow Dye #5
  • Blue Dye #1
  • potassium sorbate
  • TBHQ (tertiary butylhydroquinone, a butane-based preservative)


  • I am no fan of the toxic ingredients in Chick-fil-A's food or any fast food, but the CEO has a right to free speech, so ANY BUREAUCRAT trying to halt their expansion because of Chick-fil-A's alleged anti-gay sentiment is in silly violation of our Constitution.  The real issue is the fact that many of us are poisoning ourselves with chemicals dressed up like food, and the fast food industry is enabling the poisoning.  

    Dare to be different!  Love yourself, your family and your neighbors by eating real food: vegetables, fruits, nuts, seeds.  Use fresh herbs, spices salt-free seasonings and real salt, i.e., Real Salt, Celtic Sea Salt, Himalayan Primordial Pink Salt.  Hydrate properly with purified, re-mineralized water.Yes, you can be healthy, wealthy and wise.  Yes, you can!
